This is the recipe she told me.<br /><br />1 large eggplant peeled and chopped in cubes and soaked over night in a little salt water.<br />1 lb extra lean ground beef<br />1 green pepper chopped<br />1 red pepper chopped<br />I would throw in a orange and yellow pepper also for extra color and veggie count<br />1 large onion chopped<br /><br />Brown ground beef and drain. Cook all veggies together in a pan till tender throwing in any seasonings that you enjoy (they used a creole seasoning that tasted similar to a hot season salt to me) then throw back in ground beef. <br /><br />This was one of my favorite dishes and I don't even care for eggplant that much.
